Brunch with Chef Kinga – April 9th


We are thrilled to announce our Tessellate dinner series is back for Spring 2023. This is our idea of a modern day supper club. Collaborating with talented chefs from diverse backgrounds, we have curated distinctive menus coupled with Fair Isle beers.

April 9th will be a special brunch edition of Tessellate with our friends from Good Morning Tacos. Bringing the Austin-born tradition of breakfast tacos to Seattle, Chef Kinga Borkowski has made waves in the pop-up community with her rendition featuring scratch-made ingredients piled high on warm, fluffy flour tortillas.

Chef Kinga began her culinary journey studying at Le Cordon Bleu, and has worked across a range of high-volume and highly praised kitchens over the past 13 years. She launched Good Morning, a West coast inspired, Austin-style breakfast taco pop-up in May 2022 and has since been serving her innovative taco options at weekly events around the Seattle area.

For this first-ever brunch collaboration with Fair Isle, Chef Kinga will lean into her passion for developing elevated breakfast dishes to the next level. She will combine the warmth and simplicity of home-style brunch favorites, married with the sophistication and elegance of her classical French culinary training. The result is comfort food that feels indulgent and refined yet familiar and satisfying.

At checkout, please let us know if you have any allergies or dietary preferences, but note that we cannot accommodate gluten free and dairy free requests and and vegan options will not be available for this brunch.

$90 per guest as communal seats or by table. Ticket price includes beer pairing and gratuity.
Doors open at 10:00am with brunch service starting at 10:30am. The taproom will be open to the public following the brunch.
