Geoffrey's love of cocktails dates back well before Fair Isle. Drawing influence, we present batch f, a cocktail inspired oak-aged ale with house-made bitters.
Designing around a cocktail concept with house-made bitters on hand, we went hunting for the perfect companion. Sampling barrels from light and soft ales to dark and rich, we landed on a Westland Distillery PX Sherry Cask filled with our Flemish-inspired ale. Garnet in color, this cask had notes of cherries, plums, caramel and vanilla followed by warming undertones from whiskey previously in the cask.
Blending this stock ale with complex bitters made from tart cherries, lemon peel, walnut leaf and rose petals among other ingredients, created a beer reminiscent of a classic Manhattan cocktail.
To commemorate this perfect marriage, we created a limited edition glassware, a modern tumbler with a fair isle knitting pattern. Available for purchase with your allotment.

Soon the North Cascades will be filled with bronze and gold hues as the season changes. One such tree to change color is the darling of the Pacific Northwest, Larches. Larches are the only deciduous acting conifer, changing colors in the fall to a glorious golden yellow and shedding their needles.
In June on trip to the Chumstick Valley north of Leavenworth, we gathered fresh green larch tips for batch e. Returning to Seattle, we selected a barrel and added the larch tips - infusing them for two weeks prior to bottling.
Batch e bursts with aromas of evergreen and floral followed by a soft mouthfeel and delicate citrus notes. While some of our beers take on new life in the cellar, we highly recommend enjoying batch e now.
