A farmhouse ale with rhubarb aged in gin casks
Last year we unveiled batch one of Rachelle, and it was such a hit that we decided to bring it back for the tail end of summer. But this time around, we decided to employ a slightly different method: open fermentation.
Instead of our usual approach of completing primary fermentation under pressure, we removed the lids on our totes and covered them with mesh bags – encouraging a more expressive, ester-forward profile to emerge from the base beer. After this step, we transferred Rachelle to second-use gin casks from the great Copperworks Distilling to rest for a couple months.
We then racked the beer onto a whopping 500 lbs of fresh rhubarb from our friends at Farmstand Local Foods! These vibrant rosy stalks contribute a delightful bouquet of tart watermelon rind and watermelon jolly rancher, playing with the delicate botanical notes imparted by the gin casks. We think this is an excellent beer to celebrate the end of summer in Washington.
