We are thrilled to announce our Tessellate dinner series is back for Spring 2023. This is our idea of a modern day supper club. Collaborating with talented chefs from diverse backgrounds, we have curated distinctive menus coupled with Fair Isle beers.
Veterans of the Seattle pop-up scene, Brothers & Co will join us April 10th bringing a menu inspired by the art, patience, and deep flavors of fermentation. Exploring the shared craft between brewers and chefs, each dish will feature long and short term ferments from the Brothers’ larder.
Brothers & Co is the project of Seth and Zachary Pacleb. Born and raised in the Pacific Northwest, the Paclebs explore their home and heritage through their lifelong love of food. They have worked alongside celebrated chefs at Canlis, The London Plane, and Heavy Restaurant Group. The brothers served their scratch-made ramen and tacos at Seattle area farmers markets from 2017 to 2022, in tandem with numerous pop-ups and private catering events. The Paclebs create products that change with the seasons, and are deeply informed by local farmers and producers. They are using 2023 to scheme the transformation and future of their business.
