Ash – With Raspberries, Hazelnuts and Oregon White Truffles

To celebrate FIVE YEARS we present Ash, an oak-aged saison with raspberries, hazelnuts, and foraged White Oregon Truffles from the southern Cascades of Washington. 

It’s no secret that we’re all about PNW ingredients and Ash celebrates the many producers in Washington that we’ve worked with over the years. Brewed with Washington malt from LINC Malt, raspberries from Sidhu Farms via Farmstand Local Foods, and Holmquist Hazelnut Orchards.

We work with a local mycologist for foraging mushroom and last fall they brought us a bunch of foraged white Oregon truffles from the Washington Cascades courtesy of their truffle dog, Ash. Since the volatile aromatic compounds of truffles bind to fat molecules, we used local hazelnuts as the vehicle. By storing the truffles with the hazelnuts in a sealed container for a week we were able to capture the unique aroma of the truffles via the hazelnuts which then were steeped in the beer.

Embracing the variations from year to year, the 2024 harvest of Washington berries contained less sugar and more acid. Most of our berry beers this years will present more tart as a result and Ash is no exception. 

Ash presents big raspberry jam notes with underlying earthy and nutty aromas courtesy of the truffles. Ash is tart with nostalgic visions of cherry warheads and watermelon hard candy. There’s also a hint of vanilla and oak as the beer warms up in your glass.
