We are ecstatic to announce the release of Claude, our farmhouse ale with white peaches from @collinsfamilyorchards.
This year’s batch uses 700 pounds of white peaches from the 2024 harvest that was hand-processed by our team. Fruit season at Fair Isle requires a lot of helping hands and we are grateful to our entire staff that helps during this time. After preparing the peaches, we added them to a blend of farmhouse ales maturing in oak for an average of 12 months to re-ferment to dryness before packaging. These farmhouse ales were brewed with Luminosa hops, contributing more stone fruit characteristics to the base beer that complement the white peaches. All in all this beer is almost two years in the making and requires the help of many hands along the way.
Claude exhibits delicate notes of peaches, apricots, vanilla and toasted almonds, followed by a bright acidity. We’ve always enjoyed how white peaches complement our house yeast culture and the soft tannic structure from the oak brings exciting layers to this beer.
