Eldon is a blend of our workhorse oak-aged ales that serve as the blank slate for many of our fruited beers including Tove, Val, and Claude – but we’re excited to release it today unadorned. Composed of blend of farmhouse ales, Eldon shines the spotlight on the most important ingredient: time.  

After our beer is brewed and fermented initially with our house culture of wild and feral yeast and bacteria, the beer continues living and developing in oak. Resting and breathing in the oak puncheons located along the walls of our taproom, Eldon slowly develops new flavors, texture and a pleasant acidity.

One of our favorite elements of making mixed culture beer is brewing a wide range of stock beers setting our team up for a diverse pallet of flavors for future blending. This batch of Eldon is a blend a four different batches, aged up to 9 months in oak, with various hops and adjuncts including white wheat and spelt.

While Eldon creates the ideal canvas for our fruited offerings, we believe this celebration of simplicity deserves to be enjoyed on its own.

Behind the name: In the 1970’s a mail-order begonia shop occupied the space that is now our tasting room. During construction, we uncovered a mailbox containing correspondence with the proprietor Eldon, to a nursery in Belgium inquiring about their order of Madame R. Galle begonias.
