Ferris

We are extremely excited to introduce our six year anniversary beers!

Next is Ferris, a farmhouse ale re-fermented with Boysenberries, steeped with ginger root and orange peel, and conditioned with rosemary simple syrup. Timing typically works out nicely to make an anniversary beer with fruit from the previous summer. This year’s version features a heavy hand of extremely sweet Boysenberries from @sidhufarms. We jammed these berries in a few oak barrels to re-ferment with our oak stock saison for two months. After racking off the fruit we steeped this beer with ginger root, also from @sidhufarms, and orange peel. At packaging we conditioned Ferris with a homemade rosemary simple syrup (rosemary was sourced from bushes across the street from the brewery). This one is fruity, savory, and herbal all in one.
