Klondike – a farmhouse ale aged in American Single Malt Whiskey Casks from Copperworks Distilling

This beer is a pale farmhouse ale aged for eight months in their first use American Single Malt Whiskey casks. When visiting last year we selected these barrels because of their malt forward aroma and notes of Cointreau. Distinctly cask aged, Klondike has big notes of oak, vanilla and whiskey orange oil. While extremely dry, Klondike has a perceived sweetness that rounds out the 9.8% abv.

Today we present two beers from Copperworks Distilling’s American Single Malt Whiskey casks: Byron and Klondike. We’ve been working with Jason and team since the beginning of Fair Isle, aging beers in both their gin and whiskey casks. Last year we had the honor of handpicking a few of their Single Malt Whiskey casks for these two limited projects. Copperworks Distillery shares our same ethos around local ingredients and uses malt from the same providers we use, LINC Malts and Skagit Valley Malting, giving their whiskey a distinct grain profile that shines through in both of these beers. 

 

Copperworks Distilling has been awarded Distillery of the Year by the American Distilling Institute and received numerous awards for their Single Malt Whiskey. It’s been a joy to work with them in collaboration.
