Bobbi

Even though we don't brew an IPA, we can't deny that hops are deeply rooted in the Pacific Northwest. Bobbi is a saison with new world hops - Loral, Citra and Mosaic. Brewed with barley and wheat grown in the Skagit Valley and malted by Skagit Valley Malts.

Eugene is a saison brewed with Mandarina Bavaria hops, fermented with second-use Mosaic from Bobbi and dry hopped with loads of Citra.

Dank, with notes of grapefruit, mango and bursts of tropical citrus, Eugene blurs the line between hazy IPAs and saisons.

Hannah

Hannah is a saison brewed with barley and Salish Blue malt, a new perennial grain species, xTritipyrum aaseae, developed by Washington State University (WSU), malted by Skagit Valley Malts and grown in the Pacific Northwest.

Hannah is a bright and approachable saison with notes of straw, tangelo and grapefruit.

Our expression of the wide range of quality malts grown here in Washington. Leila is a bright saison brewed with equal parts Baronesse Pilsner malt from @JosephsGrainery in Colfax, WA and malted Purple Egyptian barley from @PalouseHeritage in Endicot, WA and all malted by @lincmalt of Spokane. Purple Egyptian barley is a black six-row hulless barley and imparts a soft and round mouthfeel but contributes minimal color. This heritage barley originated in the Middle East and spread northward to the arid regions northeast of the Caspian Sea centuries ago. Hopped with Goldings and Sterling from @crosbyhops . Fermented with our house blend of wild and feral yeasts and bacterias, Leila is a dry saison with notes of Grainy Smith apple, melon and pear.

Alicel

A SAISON BREWED WITH LOADS OF HALLERTAU HOPS

Alicel is an exploration of the elegance of the noble hop, Hallertau Mittelfrüh. Hallertau Mittelfrüh is the workhorse hop here at Fair Isle, but has fallen out of the spotlight of the craft beer scene as bold, tropical and trendy hops prevail. As we often do at Fair Isle, we took the less traveled approach and created Alicel to celebrate everything we love about this hop - delicate and herbal.

Brewed and dry-hopped with 3lbs per barrel of Hallertau Mittelfrüh, Alicel has beautiful floral notes of honeydew melons and cucumbers and aromas that transport you to an early spring herb garden.

Working with Linc Malts, we used a hint of raw wheat and Francin barley grown by Trico Farm in Island City, OR. Named after an unincorporated town adjacent to where our grain for this beer is grown in Eastern Oregon, Alicel ‘shows up on the map’. It's right up the road from the farm, but all that is there now is the local grain elevator.

Alicel is a perfect companion for the summer time, bright and dry.
